Pan de cerveza tostada / Toast bread beer
Ya iba siendo hora, al fin un rato para preparar un pan algo especial. Con ese toque de la cerveza que le va a dar un gusto dulce, perfecto para acompañar con queso...o con lo que cada uno quiera...
Ingredientes:
- 200 gr de harina de trigo
- 130 gr de harina de fuerza
- 70 gr de harina blanca de centeno
- 1 cerveza tostada
- 5 gr de levadura fresca
- 10 gr de sal
- 30 gr de miel
- 50 gr de harina integral
- 50 gr de harina de fuerza
- 5gr de levadura fresca
- 100 gr de agua
- Preparamos el poolish la noche anterior, para ello mezclamos todos los ingredientes, tapamos con film transparente y metemos en la nevera.
- A la mañana siguiente sacamos el poolish y dejamos atemperar unos 15 minutos.
- Mezclamos los diferentes tipos de harina con la cerveza y el poolish, en la amasadora.
- Añadimos la levadura y amasamos, la miel y amasamos. Por último la sal y amasamos durante 10 minutos.
- Formamos una bola y la dejamos en un bol enaceitado. Tapamos con un paño de algodón o lino y dejamos reposar hasta que duplique su volumen.
- Enharinamos la encimera y colocamos la bola encima. Desgasamos ligeramente y boleamos. Dejamos reposar 15 minutos.
- Formamos un batard, yo he seguido las instrucciones del video de La Cocina de Babette.
- Ponemos en un banettone y dejamos reposar 1 hora y media, tapado con un trapo de algodón.
- Precalentamos el horno a 200ºC, con la bandeja o piedra, así como el recipiente para el agua.
- Ponemos el pan en la bandeja del horno o piedra y damos un tajo rápido a lo largo de la pieza. Ponemos un vaso de agua en el recipiente destinado para tal fin y cerramos el horno. Apagamos y dejamos así 10 minutos.
- Sacamos la bandeja del agua y ponemos el horno a 200ºC y horneamos 40 minutos. Colocamos el pan sobre la rejilla y lo dejamos reposar 20 minutos con la puerta abierta.
- Dejar enfriar sobre rejilla.
